Pineapple Chicken with Rice

Tonight I felt like playing in the kitchen and came up with this yummy chicken dinner.

3 cups cooked rice
2 chicken breasts
1 8oz can crushed pineapple with juice
2 1/2 T. lemon juice
Zest of half of the lemon
1/2 cup brown sugar
1 t. mustard powder
1/2 t. curry powder
pepper to taste

Preheat oven to 350. put rice into 8x8 casserole and lay chicken on top. Mix the rest of the ingredients in a bowl and pour over top of chicken. Cover with foil and bake 45-50 minutes uncovering during last 20 min.
While you are zesting the lemon finish the rest of it and put it into a ziplock baggy and store it in the freezer for the next time you need it, like maybe when you are going to make some lemon bars in my next post.
